Inspired by Jennifer Wong’s show ‘Chopsticks or Fork?’, I wanted to stitch a Chinese restaurant that is casual, fun, and iconic to Perth. Billy Lee’s is a late night Chinatown eatery featuring outdoor tables, wood-panelled walls, a 100+ dish menu and, naturally, a rivalry with neighbouring restaurant Uncle Billy’s.
